Matooke (Green Plantains)

Matooke is a variety of banana indigenous to Uganda. It is the country’s national food and a staple crop in the region.

Harvesting Methods

Matooke is harvested when the fruits are mature but still green. Harvesting is typically done by hand, cutting down the entire stem when the fruits reach their full size but before they begin to ripen. The ideal time for harvesting is about 80-100 days after flowering.

Storage Techniques

Fresh matooke can be stored at room temperature for up to 1 week. For longer storage, they can be buried in the ground in a cool, dry place, which can extend shelf life up to 2 weeks. For commercial purposes, they are often stored at 13-14°C with 90-95% relative humidity to delay ripening.

Export Information

Uganda exports matooke primarily to neighboring East African countries, Europe, and the Middle East. For export, matooke is harvested slightly earlier, carefully packed to prevent bruising, and sometimes treated with natural preservatives to extend shelf life. Vacuum packing and refrigerated transportation are common for international export.
